David Foley and Julie Randles, a husband and wife who love to cook, have been proprietors of the Wild Geese Restaurant in Adare for the past sixteen years. In that time David has established a high standard of food in the restaurant and Julie maintains impeccable service.
Chef David Foley brings a wealth of talent and experience to the Wild Geese having worked with some of Ireland and the UK’s very best hotels including The Park Hotel Kenmare, The Kildare Hotel & Country Club, the Waterside Inn, Bray, Berkshire. Stephen Bull’s Restaurant, Blanford Street, London. In addition to this, he spent six years as Head Chef in the Hibernian Hotel Dublin 4, where the restaurant received numerous awards including five consecutive 3 AA rosettes. His well-travelled palate brings an expert mix of flavours to everything from casual lunch menus to evening fine dining; you’re guaranteed dishes to delight.
David has been a finalist of the Best Chef category of the Restaurant Associations Annual Awards. The restaurant has been listed for fifteen consecutive years in the Bridgestone Top 100 Restaurants Guide, also the Georgina Campbell’s Jameson Guide. The Restaurant in 2002 was one of three restaurants nominated for the Gilbeys Gold Medal for Fine Dining in Ireland Awards. The Wild Geese was also announced Winner of Best Restaurant in Munster in The Jacob’s Creek Restaurant Awards 2007.
After being an employee for so long, David developed an intense ambition to start his own restaurant and once The Wild Geese became available he and Julie jumped at the chance to run their own business.
