University of Limerick based organisation ReStart have released their amazing cookbook to the public.

ReStart is a social enterprise set up by students of the University of Limerick in Enactus UL. The project aims to integrate refugees and asylum seekers into the local community through various initiatives. 

ReStart was founded by Sikhulekile Ruth Ndlovu in 2017. After personally facing the problems of living in Direct Provision and seeking International Protection in Ireland, Sikhulekile incredibly decided to set up the ReStart who help out people in similar positions to herself. The focus of ReStart is to integrate Refugees and Asylum Seekers- International Protection Applicants with the local community. 

The book is the product of a recent ReStart project known as their Restart Cooking initiative. The book will include mouthwatering recipes from Zimbabwe, India, Nigeria, and South Africa. All of the tasty new recipes have been gathered from the International Protection Applicants who have worked closely with ReStart, even including a Kenyan recipe from Colm O’Gorman. 

Talking about the new book, ReStart commented, “We are delighted to include a preface written by Colm O’Gorman, Executive Director of Amnesty Ireland and food columnist with the Irish Examiner, who also contributed a Kenyan recipe. The recipes are not the only exciting element of the book we have also included some tips from ReStart Gardening on how to succeed at growing your own food at home, a checklist so you can track and rate the recipes you cooked, as well as some educational information on the topic of direct provision, and integration.” 

Speaking on the new initiative, Colm O’Gorman, Executive Director, Amnesty Ireland said “That is what makes this book so wonderful. Cooks from across the world, coming together to share their creativity and recipes for dishes that have been down passed for generations. In doing so they invite us to come to their kitchens or to bring their kitchen into ours. There can be no better way to get to know each other and to discover that, in all of our wonderful, beautiful difference, we are all really the same.”

He was named the Limerick Person of the Year (2011) and won an online award at the Metro Éireann Media and Multicultural Awards (2011) for promoting multi-culturalism online.
